Circassian (Adyghe) cheese smoked on apple tree sawdust, made from whole cow's milk. Premium class.
Moderate density, juicy with a richer and more pleasant in its own way, delicate taste and bright fruity aroma.
Salt to taste (not salted). This is a real traditional cheese from the Adyghe private family farmsteads. It is prepared by curdling whole cow's milk (without skimming). The dense, smoked cheese rind becomes impervious to air and bacteria. Stored for 5-6 months.
The weight of one whole circle is ~ 1.2 kg. When delivered to the buyer, it is packed up in 1/4, 1/2 circle and a whole circle.
